Milk Bar Crack Pie

If science was working with me, I would be making progress with this whole research thing. there's just something about the weather change that makes things not want to work.

Oh well.

In other news: Private Thoughts performed at Mike and Molly's this past Friday night.

They had a new drummer, Tyler. First show with him, they did a great job. outdoor set in the cold cold night






But moving on to tonight's real entry.... making of the Crack Cake...

I made an ooey gooey butter cake recently, and it was delicious. Did i make it from scratch? alas, i was not that daring. BUT i found this recipe for crack pie. this was a must.

Cookie Crust
2/3 c + 1 T flour
1/8 t baking powder
1/8 t baking soda
1/4 t salt
1/2 c softened butter
1/3 c lt brown sugar
3 T sugar
1 egg
1 c rolled oats

Preheat oven to 375 F. Mix baking powder, baking soda, salt in separate mixing bowl.
Cream the brown sugar, butter, and sugar until.... creamy :-) and whisk in egg until incorporated.
Stir in the flour mixture followed by the oats

Line 9x13 baking sheet and spread the gooey batter evenly over the entire pan. bake for ~20 min (i baked for about 25 min to get a little more toasted and crunchy-ness)

take out of oven and let cool!

Making the Crust
cooled cookie crust
1/4 c butter
1 1/2 T brown sugar
1/8 t salt

Combine all of the ingredients in a food processor until evenly blended

press into a pan firmly to pack the crust (i made an 8x8 square pan plus many mini pies)

FILLING!!!
1 1/2 c sugar
3/4 + 1T lt brown sugar
1/4 t salt
1/3 c + 1 tsp milk powder
1/3 c corn flour
1/2 c butter
4 oz unsweetened apple sauce
2/4 c + 2 T heavy cream
1 tsp vanilla extract
8 egg yolks

Set oven to 35o F

Whisk brown sugar, sugar, salt, and milk powder and corn flour in mixing bowl.
Melt the butter and add to dry ingredients, then add the 4 oz apple sauce.
add heavy cream then vanilla extract
Making sure not to mix in too much air, gently whisk in the egg yolks.

Bake at 350 for about 15 min (the mini pies were solidifying around 12 min)
Turn the oven down to 325 and bake for another 10 min (the mini pies were pretty much over done after 5 minutes :-( but the 8x8 pan looked delicious!)

remove from oven and let cool. don't forget to chill in the fridge. apparently it tastes spectacular if it's been chilled :-)
